Savoury Muffins

Pre-heat oven to 180C. 

Place bacon in frying pan and cook over medium heat, stirring until crisp.

Remove from pan and drain on absorbent kitchen paper Place egg, milk, oil, and parsely in a bowl and mix to combine. Combine flour and cheese.

Add flour mixture and bacon to egg mixture and mix until combined Spoon mixture into twelve greased 1/2 cup muffin tins and bake for 25 mins or until muffins are cooked when tested with a skewer.

Serve warm or cold.

  • Great muffins! I added a couple of tablespoons of wholegrain mustard and some herbs from the garden (thyme & sage) and some parmesan cheese... delish!

  • Nothing wrong with this recipe. Cool that it uses oil instead of having to faff around with butter. Will use this one again.

  • I added some chopped char-grilled red peppers to this mixture .... just for a change ..... the family and my husbands co-workers thought they where great..... being Greek....I added chopped black kalamata olives and crumbled feta cheese with or without the bacon and a dash of fresh mint along with the flat parsely ...... these went down really well with my mum and dad
