Cheese Mini-Muffins

Get your oven to 200C first. This is so fast that it'll barely have time to pre-heat.

Sift the flour and baking powder into a bowl. In a separate bowl whisk the egg till it goes frothy. Tip the egg, milk and cheese into the flour and mix well. Done. Just like that.

I bake them in a mini muffin tray but if you don't have one:

Grease a piece of paking paper and line your baking tray. Using a t-spoon, put blobs of the mix onto the tray. You'll end up with about 25.

Bake for about 10 mins or till their golden.

  • I added dried oregano to the mix. Also used tasty cheese. Tasted pretty flash. Even the fiance who doesn't like savoury cheese things loved them!

  • Made 2 batches of these, first batch I think 3t baking powder too much, so when I did the 2nd batch with 1 and half t baking powder-It was YUMMY!!

  • Just did these again with 1 and 1/2 cups cheese and 1/2 cup smoked salmon. Really tasty. Used a mini-muffin tray to bake 'em and they came out great.

  • Made these -as suggested - with 1 and 1/2 cups tasty cheese and 1/2 cup chopped bacon. Wow! Delicious.

  • Came out great. Would be even better with bacon, maybe half and half with the cheese. Or add some salt to the recipe. If no bacon make sure the cheese is 'Tasty' or something with good flavour.
