Lemon or Orange Icing

Grate the rind of the lemon or orange and squeeze out the juice. 

Throw the icing sugar into a bowl and tip in the juice slowly - until you get to the consistency you like (note: if you don't have enough just top it up with a tiny bit of water).

Then mix in the rind and the butter and voila!

  • The icing was a little bit too grainy for my taste, probably because of the cornstarch in the icing sugar. overall it took one and a half naval oranges to flavour it, but it compliments my (unfortunately dry) chocolate cupcakes well
