Short Crust Pastry

Sieve the flour into a bowl and mix through the icing sugar. Add the grated butter.

Smoosh it all together with a fork, then get your fingers in and squeeze the butter through the flour until it goes like breadcrumbs. 

Make a well in the centre with a spoon and crack in the egg yolk. Start to mix that in from the centre out and pour in your lemon juice. Slowly add a little water and start working the mixture together with your hands. As soon as it's a 'rollable' consistency knead it a couple of times - not too much.

Wrap it in cling film and stick it in the fridge for at least 30 mins.

Now it's ready for your pie or tart or whatever! 

TIP: When you knead the pastry, before chilling, get it into a round shape, like a thick pancake. That makes it much easier to roll afterwards.

  • It's sweet and has lemon juice in it. Why?
    I was hoping for a short-crust that is suitable for a chicken pie. This isn't. Use it for desert baking only.

    Better yet:
    25g butter
    25g lard
    100g plain flour
    2 table spoons of water
    pinch of salt.
    Mix butter and lard (softened first) with the flour - make it go like bread crumbs. Add water to make dough. Wrap in cling film and stick in fridge for at least 30 mins before rolling out.

  • Excellent recipe - saved the day. Went to local Woollies to buy pastry for Fathers Day bacon and egg pie, and they had none! I threw a tantrum at the checkout to no avail. The chiller had broken down and they'd put all the pastry out the back and 'couldn't reach it'!!!! So I found your recipe and it was so much better than the bought stuff. And easy, considering I grated my finger as well as the butter and had to make it one/left-handed to avoid blood in the pastry. The bloke was very impressed.

  • I figured out that you need 120 gms butter and about 2 tblspns lemon juice but nowhere could I find how much flour to use, obviously this quantity is critical! Help to stop me stuffing this up
