Gluten Free Crumpets
Sift together the dry ingerdients into a bowl and run in the butter.
Drop eggs into centre, add a little milk and stir rapidly with a whisk allowing the flour to drop gradually in from the sides. when half the milk is added, beat until air bubbles rise.
Add the remainder of the milk and let it stand for an hour. (crumpets are lighter if the batter is allowed to stand)
Drop a goiod dessert spoonful into a hot-ish non stick pan and cook until bubbles appear on top. it take a bit of trial and error to get the temp right. flip and cook till golden on the other side.
Mash up a banana with a bit of strawberry jam and get into it.
