Cookie Coffee Dessert

I make this in individual servings using ramekins, but if you wanted to you could make a good old fashioned biscuit log or even layer it all in a bigger dish. The way I do this it serves 4.

1. Put the jug on and make a cup of coffee (black, medium strength).

2. Whip the cream. If you want to you can flavour it with some vanilla or honey or kahlua or even chocolate. I don't. There are plenty of flavours as is. 

3. Assemble: put a dollop of cream in the bottom of each ramekin. Dip a biscuit into the coffee (quickly - they VERY absorbant) and push it down on top of the cream. Add two more dipped cookies, then another dollop of cream, then two more cookies, then cover the whole lot with more cream. 

Done.Chuck them into the fridge for a good 1/2 hour then serve chilled.

If you have some it's worth sprinkling choc chips on top or grating some dark chocolate, otherwise it just looks like a ramekin full of cream.

This dessert takes about 4 minutes to prepare.

Alternative: Use hot chocolate instead of coffee. YUM!

  • Great idea, maybe I'll use a shot of espresso about 1.5 oz and then 6 oz of water, and then a little splash of Torani honey vanilla syrup! :)
