Bob's Apple and Blackberry Sponge
Preheat the oven to 190C.
Throw butter, vanilla and sugar (added slowly) in a bowl and beat til smooth. Add eggs while still beating. Sift the flour and baking powder together (stops any lumps) then fold into mixture. Add the milk and give it a good mix to even it out. In a greased oven dish place strained blackberries and diced apples, and sprinkle some sugar across the top. If using fresh blackberries taste them first and if quite 'tart' add a little more sugar. Put the sponge mixture over the top of the fruit and bake for about an hour but at least until sponge springs back when pushed.
Serve with vanilla ice cream and fresh whipped cream topped with strawberries.
