Blueberry Pancakes

Sift the flour and other dry ingredients in a bowl, dig a well in the centre and crack the egg into the well. Then start pouring in the milk, mixing as you go until it's nicely combined.

Tip in the blueberries and stir through.

Cook in 1/4 cup lots in a medium-hot pan (NOT TOO HOT) with a blob of butter. Flip it over when bubbles appearon top. if it's too dark on the first side the pan is too hot - turn it down!

  • Awesome and yum!
    I did it slightly different. I used mixed berries and blended them with the milk for just a few seconds. It broke the berries down and released some of the flavor, and the slightly fluffy milk made the pancakes even lighter!
    I think ill have some tomorrow too!

  • I think the high level of baking powder was needed so the dough rises to cover the berries however the level of salt was a bit high, I'd try 1/4 tsp. Also since the berries are quite dispersed it could do with some sweetener though not too much as you don't want to override the berry flavor.
