Rock Cakes

Pre-heat the oven to 200C. 

1. Sift flour and baking power into a bowl.

2. Melt butter and mix into the flour until the mixure is like coarse breadcrumbs.

3. Add sugar, and how many chocolate chips you want (I'd say around 150grams).  

4. Add egg and enough of the milk to make a stiff dough,  

5. Throw 'em in rocky heaps on a greased tray and bake for about 10 minutes.

  • Well, to be honest, I tried all these things and I'm resigned to making pan cakes. I've given up and am now making scones.

  • Angelas, when adding the butter to the dry mix, make sure its not too runny, and get in there with your hands and almost "rub" the butter into the dry mix. add the egg, and only just a splash of milk, to make it workable but firm. Hope it helps. Good Luck :)

  • Hi Angelas. Try softening the butter instead of melting it, and working it in to the flour. Keep the egg! Try the oven at 180C (NO FAN). Hope that helps.

  • Please help me. My rock cakes look like pancakes. I have tried making the mixture really firm, slightly less firm, taking out the egg, blah, blah. The cakes just go 'eeewwhhhhh' into flat things in the oven pan. Any suggestions??

  • Hi Guys! even tho I am a chick I have no hesitation in looking you up. My grandmother used to make a similar recipe to this and I am very keen to try yours however there is one small problem - 1 egg on ingredient list and no instruction on its addition to the batter?? hmmm
