Plum and Yoghurt Cake

Tip the yoghurt out of a 125g pot (keep it to one side) and clean out the pot. This is what you use to measure the ingredients.

First up prep a 21 cm cake tin by lining the base and greasing the whole thing. I find it easier to do this with an electric mixing bowl. Turn it on and just tip the ingredients in while it's going.Heat the oven to 160C.

 

1. 'Cream' the oil and sugar. It doesn't really cream but mix it well.

2. Add the ggs one at a time, mixing each one well.

3. Chuck in the yoghurt and vanilla essence.

4. Turn off the mixer and sift in flour and baking powder. Stir through.

5. Pit and slice the plums into quarters length wise.

6. Put the plum pieces into the mixture and stir through gently. Just a couple of stirs.

7. Bake for about 1 hour.
