Orange Cake

Preheat the oven to 180 deg C. Lightly grease or line with baking paper a six cup non-stick ring cake pan.

Quarter the orange. Place in a food processor fitted with a steel blade.

Add the butter, oil, eggs and sugar & process until smooth.

Add the flour and baking powder and mix until just combined.

Pour into the pan and bake for about 35 minutes or until a skewer inserted in the centre comes out clean.

Cool on a wire rack. Serve dusted with icing sugar or with tangy orange icing.

  • I baked a double recipe straight off and now I'm going to do the same again as the last two cakes are gone. Kids, neighbours and family loved it. My boy loved using the power tools to help me make it.

  • heated 1/2 c orange juice with 2T of sugar and poured over cake when cooked...delish
