Fruit Buttermilk Scones

Preheat the oven to 230degC or 200degC fan bake.

Chuck the flour, baking powder and salt in a bowl.  Grate in cold butter and blend through quickly and as lightly as possible - the less you do the better. When the mixture is fully integrated and resembles fine breadcrumbs you are ready to add fruit and the buttermilk.  Shake the buttermilk then add it with a flat knife or spatula.  Keep the mixture wetter than normal.

Place the mixture on a floured bench and gently pat out into shape with a few gentle movements - do not knead.

With a sharp knife cut into pieces and place on a baking tray, close together.

Bake for 15-18 minutes (in a 200degC fan bake oven check after 10-12 minutes). Serve with butter and jam..

  • Way nicer than with ordinary milk!! If you like them sweet add 70gr sugar.
    The wife can't get enough of them!!!
