Coffee and Walnut Muffins

Pre-heat the oven to 200C

Dissolve the coffee in the hot water and add your milk, egg and oil.

In a bowl, stir flour, baking powder, salt and sugar together and stir in the nuts.

Pour the liquid ingredients into the dry and mix only to moisten.

Spoon into greased muffin tin and bake for 15-20 minutes.

  • Just put in the coffee without water. No clue why you add water. I put in a heaping spoonful of baking powder.

  • Hi Virginia ... with self raising flour you shouldn't need the baking powder - that might be why they sucked!
