Coconut Cake
Grease 21cm round cake tin.
Combine all ingredients, mix with wooden spoon.
Pour into tin.
Bake in moderate oven about 45 minutes.
Stand cake in pan 5 minutes.
Turn onto wire rack to cool.

Yum! Added about half a cup of chocolate chips to this, baked at 160 (recipe doesnt say), and topped it all off with some chocolate icing, will make again for sure

SOOOO good! Added white chocolate chuncks to the mix and it was fluffy and delicious :)
