Christmas Mince Muffins

Heat the oven to 200C. 

Get your flour, sugar and salt into a bowl and mix. In a separate bowl whisk the eggs, sour cream, milk and essence together until it's as smooth as James Bond.  Mix the wet ingredients with the dry - not too much!!

Okay - the important bit. Grease or spray the muffin tin and spoon in the mixture using about 2/3rds of it. The muffin pans should each be about 1/2 full. using a slightly wet spoon make an indent in the top of each lot of mix and put 1 - 2 teaspoons of the fruit mince on. Then cover the fruit mince with the remaining muffin mix.

Bake for about 12 - 15 mins. Dust with icing sugar or serve warm at christmas lunch with icecream.
