Carrot Cake

Get the oven turned on and warmed up first to 180C. Smear butter all over the inside of a 20cm cake tin. Open a beer.

Prep by grating the carrot, apple and orange rind into a bowl.

Beat the eggs till they're good and thick (should have the consistency of a good head of Guinness). Stir in the oil. Sift in the flour, sugar and cinnamon and then the baking soda. Mix it together - but not too much.

Tip the bowl of grated stuff in and fold it all through. Again - just so it's mixed evenly and no more.

Pour it out into the cake tin.

Then chuck your future cake into the oven for about a first half of rugby. Check it at 35 but it should take 40mins depending on your oven.

Note: I reckon you could get away with more cinnamon than I used here. And don't overdo the apple - this is a moist enough cake as it is.

  • Amazing - i made this for my friends tea party and got so many compliments on it. 100 times better than any carrot cake you can buy. Do half the baking soda tho.
