Boiled Sultana Cake
Heat the oven to about 170C.
Add butter and golden syrup to boiled fruit and mix.
Add eggs and essence, then sift in the dry ingredients.
Mix and put into large cake tin lined with two layers of greased paper.
Cook 1 - 1 1/4 hrs.
Okay - you need to prep for this by boiling some fruit, but just for ten minutes and after that it's easy.

This is amazing. I made a few changes too by adding baking soda and also put in a whole variety of dried fruit. Very nice and light and great warm with some ice cream.

I made changes as suggested by Bryce (extra spices and golden syrup), used mixed fruit rather than sultanas and the cake was judged to be a huge success! So I decided that I needed to make another, but in my haste, I forgot the eggs... Doh!!! - but SWMBO said the cake is better for it - so no eggs in the future...

I made this cake but had to adjust the fruit contents as we did not have enough sultanas or any pineapple in the house. I made up the quantity with a mixture of sultanas,currants, and chop up dates and it turned out to be a delicious cake. Eaten with a slice of tasty or mild cheese on the top, it is really great. I understand this is a Yorkshire way to eat fruit cake regards Peter A.

Yum! I did change it a bit though. I added 1 teaspoon of mixed spice, 1/2 t of nutmeg, 1/2 t cinnamon, and 1 teaspoon of baking soda after the fruit had boiled. Oh and 2 Tablespoons of golden syrup instead of one. It only lasted one day!! The family is scoffing the last with a coffee after dinner.
