Barry's Simple Fruit Cake
Soak the fruit mix overnight in the coffee.
Next day...add the flour and mixed spice and mix it all together.
Bake at 180c for about 85-90 minutes (depending on the oven).
Done.

Here is a variation of Barry's cake.
Instead of the coffee, subsitute a 600 ml bottle of chocolate milk. I bake it for 45 minutes @200c in my mini oven. Equally as easy and juicy.Posted by baz, 20/02/2009 11:38am (3 years ago)

I use a variation on this one.
1 kg of fruit cake mix
600ml bottle of chocolate milk
2 1/2 cups self raising flour
teaspoon mixed spice
The preparation is the same as Barry's e except I bake in my mini oven for around 45 minutes @ 200 degrees c. Both are excellent and simple.Posted by Baz, 01/02/2009 1:01pm (3 years ago)
