Banana Cake 1

Get the oven turned on and warmed up first to 180C. Grease a 20cm cake tin. Open a beer.

Zap the butter for 30 seconds in the microwave (or until it's soft but not melted) then cream in the sugar.

Add the eggs one at a time and keep on beating till it's smooth as a 20 year old Brazilian model's rear end. Add the smashed bananas and stir through.

Separately stir the baking soda into the hot milk until it dissolves and pour the milk into your mixture. Then sift in the dry ingredients.

Don't over mix - just fold it all through and then pour it out into the cake tin.

Take a good swig of your tinny and then chuck your future cake into the oven for a good first half of rugby plus the Haka. Around 45 - 50 minutes depending on your oven.

Top Tips:

The bananas situation is: 3 reasonable sized ones or up to 4 little ones. This is more than the original recipe called for but it helps turn out a nice moist cake. And moist is always good.

I like it best with chocolate icing but if you're some sort of daisy-chain making greeny you might prefer Lemon icing.

  • Great recipe - i substituted the flour for 140g of Almond Meal and the rest Rice flour and a touch of xantham gum and voila gluten free banana cake that is super yummy!!!
