Banana and Walnut Loaf

Get oven up to 180C first.

Cream butter and sugar and add the egg, mashed bananas and chopped walnuts. Then add flour and baking powder. Dissolve baking soda in milk and add to mixture.

Fold together and pour into baking paper lined loaf tin and bake at 180 degrees for 1 hour. Cool on wire rack before slicing, can be buttered if desired and the loaf freezes well.

  • Awesome. Everyone loves it and asks for the recipe.
    One tip though, if you have a dodgy oven like I do, cook it for at least 30 mins with aluminum foil over it. Saves it getting burnt on top while still cooking into the middle.
