Lolly Cake
1: Crush your malt biscuits without eating any... (make sure the crumbs are FINE not chunks).
2: Put butter and condensed milk into a BIG bowl and microwave until it's melted (put on medium/low so your butter dosen't splatter everywhere, after it's melted mix together with wooden spoon).
3: Cut your eskimo lollies into smaller pieces and mix into butter mixture (you can use as many as you want, I used half a bag of pascalls Eskimos).
4: Chuck in all the biscuit crumbs into the butter/condensedmilk/lollies and mix well with wooden spoon.
5: On your bench (or a huge chopping board) shape all the dough into a log shape (it's ok the mixture is supposed to be sticky/buttery, If it's falling apart you put too many eskimos in).
6: Sprinkle HEAPS of dessicated coconut all over the lolly cake on all sides,
7: Put on plate and put in fridge for a couple hours (or freezer for 20 minutes ;)
Tips: You can substitute other stuff into the recipe to completely change it e.g no eskimo lollies, add cup of coco powder into butter/condensed milk then add biscuits to make chocolate slice or to make rocky road, melt in chocolate with butter/condensed milk, add peanuts and marshmallow pieces then biscuit crumbs.
