Lolly Cake

1: Crush your malt biscuits without eating any... (make sure the crumbs are FINE not chunks).

2: Put butter and condensed milk into a BIG bowl and microwave until it's melted (put on medium/low so your butter dosen't splatter everywhere, after it's melted mix together with wooden spoon).

3: Cut your eskimo lollies into smaller pieces and mix into butter mixture (you can use as many as you want, I used half a bag of pascalls Eskimos).

4: Chuck in all the biscuit crumbs into the butter/condensedmilk/lollies and mix well with wooden spoon.

5: On your bench (or a huge chopping board) shape all the dough into a log shape (it's ok the mixture is supposed to be sticky/buttery, If it's falling apart you put too many eskimos in).

6: Sprinkle HEAPS of dessicated coconut all over the lolly cake on all sides,

7: Put on plate and put in fridge for a couple hours (or freezer for 20 minutes ;)

Tips: You can substitute other stuff into the recipe to completely change it e.g no eskimo lollies, add cup of coco powder into butter/condensed milk then add biscuits to make chocolate slice or to make rocky road, melt in chocolate with butter/condensed milk, add peanuts and marshmallow pieces then biscuit crumbs.

Lolly Cake - what do you reckon?

  • It has to be foam bananas for me as no Eskimos in the UK and can't wait for some to be sent over. Drooling at the thought of this!

  • ive been making lolly cake for a few years now i always make a double batch so i can use all the swetended condensed milk and i some times put choc chips or marshmellows in them and it tastes better when the buiscuits a very finely crushed you can also get a spoonfull of the mixture roll it into balls and then roll in coconut if i dont haver much time i will put it into a brownie tin and comprees it well so theres no gaps and then place in the fridge great recipe i love it and am going to make some today theres so many things you can do with this recipe well worth doing
