Cinnamon Pinwheel Cookies

Get the oven turned on and warmed up first to 220C. Grab a beer. This is for drinking while you bake - not for use in the recipe.

Dough:
Combine the flour, baking powder, salt and sugar. Cut in the softened butter and mix it with your fingers. Go on - get your hands dirty and then wipe them on your jeans! The mix should be coarse. It'll feel like a bit like soft breadcrumbs.

Add the milk and stir through until the dough is soft. It'll almost look a bit too wet - but don't sweat it. Take a good swig of your tinny because here's where the work starts.

Turn the dough out onto a floured surface and then roll your knuckles into it. Keep on rolling and then working it with your knuckles till it's had enough. Then roll it out into a flat square about 1 foot by 1 foot.

Filling:
Spread the next lot of butter out over the surface. Mix together the brown sugar, cinnamon and sultanas and sprinkle over the top.

Roll it all up (carefully). Seal it. Cut it into 1 inch wide pieces. Put some baking paper down on a tray, lay the pieces flat.

Phew. Now - another swig and and then chuck your biscuits into the oven for about 15 mins.

Top Tips:

Make sure the dough square is rolled even or the cookies come out thick and thin and all over the place.

  • Delicous! And pretty easy too since I could do it, agree with the comment below though- pop the rolled dough into the freezer for a bit first, heaps easier to cut..

  • I LOVE these! I even had my little 2 year old helper by my side and she had a bit of the dough off me to make her own. They always turn out amazingly and last about 5 mins :o)

  • Wow, I use this recipe every time and omg!! They are mouth watering perfect! Only thing I do different is put the rolled up dough in the freezer for 10 minutes so it's easier to cut, other than that, brilliant recipe! Love it!!

  • Thanks boys for this great recipe :) I have added some grated apple to the cinnamon mix..and it just adds another whole dimension of yum to this recipe. Nice one bruv!

  • There was a bit of dicking round with the pastry but bloody hell they tasted great. My wife and I wolfed them down fast.
