Belgian Biscuits

It's a bit messy but worth the effort of getting your hands dirty. Kids love 'em. 

1. Cream butter and sugar. Add the egg and golden syrup.

2. Combine flour, baking powder and spices. Mix into the butter mixture.

Now's the good part - Roll out on a floured surface to about  1cm thick, and cut into rounds.

3. Bake on a greased tray on top of baking paper @ 180C for about 10min - watch they don't burn - then leave to cool on the bench.

4. Make icing by beating together the icing sugar and water. Add a couple of drops of colouring.

5. Divide the buscuits into two equal batches. Ice one batch. Spread the other batch with raspberry jam. Place an iced biscuit on top of a jam biscuit and join together.

Tips: Be generous on the thickness of the biscuit as the thinner it is the easier it burns. You could add a drop of jam or cherry on top of the iced biscuit.

Great with a flash coffee.
